Abstract

Thesis on Inheritance and maintenance of identity Local food of Thai people of Khmer descent Surin Province The objectives are to 1) study the identity of local food consumed of the group of Thai people of Khmer descent Surin Province. 2) To prepare local food recipes of the Thai-Khmer group. Surin Province To serve as a guideline for maintaining the identity of the local food consumed. The study was conducted using qualitative and quantitative research methods. The main contributors for qualitative research are Thai people of Khmer descent who live in Ban Prue Kian community, Nok Mueang Subdistrict, Mueang Surin District. Surin Province, 5 people Collect interviews Come adjust to a standard recipe. Take it to 4 experts for evaluation to make it a recipe that has the original characteristics of the food and taste. The research results found that Local food consumed of the group of Thai people of Khmer descent Surin Province There are 9 recipes in total: Puna curry, Banana curry, Hong Curry , Miang Jackfruit , Coconut chili paste , Spinach Chili Paste , Frog chili paste , Dried rice balls and Spotted rice porridge.
