การประยุกต์ใช้เทคนิค Active Learning ในการจัดการโภชนาการอาหาร เพื่อเสริมสร้างภาวะโภชนาการที่ดีของนักเรียน: กรณีศึกษาโรงเรียนบ้านเพชรประชาสามัคคี

Abstract
This research aimed to study the effect of applying Active Learning techniques in food nutrition management to enhance the good nutritional status of students at Ban Phet Pracha Samakkhi School, Buriram Province, using a participatory action research model. The sample comprised 116 students in grades 1-6, parents, teachers, and the community. The research was divided into 3 phases: preparation, implementation, and evaluation. Active Learning techniques were used to organize nutrition promotion activities in the implementation phase. The research results showed that after the experiment, students had significantly better food consumption behaviors in all aspects, especially the consumption of nutritious food increased to 96.55 percent.
The SWOT analysis revealed that the project had strengths in using Active Learning techniques and community participation. However, it faced challenges from parents’ economic and time constraints, as well as the influence of inappropriate food marketing. The results of this study showed that the application of Active Learning techniques with family and community participation could effectively promote good food consumption behavior and proper nutrition in school children and expand the implementation to other schools. In addition, policy recommendations were made, such as supporting the integration of Active Learning techniques in the curriculum, promoting community participation, developing financial support policies for low-income families, and controlling inappropriate food advertising targeting children.
