Enhancing the Product and Increasing the Market Value of the Smashed Pork Product from Community Enterprises in Ang Thong Province

This research aims to 1) develop the production process and enhance the quality of pounded pork products, 2) calculate costs, determine the selling price of pounded pork products, and 3) create and expand marketing channels for the pounded pork products of the community enterprise in Ang Thong Province. A participatory action research methodology was employed, involving data collection and surveys. The population consisted of 42 members of the Ban Ree Pattana Agricultural Housewife Group, located in Ban Ree Subdistrict, Mueang District, Ang Thong Province. A purposive sample of 10 members was selected. Data collection methods included in-depth interviews and observations, and the results were analyzed descriptively.
The study found that the process of pounded pork products by the Baan Ree Phatthana Agricultural Housewives group involves several steps. It begins with selecting fresh, high-quality pork, which is cleaned, trimmed, and cut along the muscle fibers into uniformly thick pieces. The pork is then marinated with ingredients and dried in the sun. Afterward, it is grilled until cooked, pounded, and then baked again to remove moisture before packaging. The product is packed in vacuum-sealed bags, placed in boxes, and distributed. The analysis of production costs and pricing revealed that while production costs were calculated, they were not entirely accurate according to accounting principles. The selling price was determined by adding a profit margin to the calculated cost and considering competitor prices to set their price. The production cost calculation showed that the cost of the pounded pork product was 81.98 THB per box (100 grams per box). To plan for profitability, a new selling price was set by applying a 100% markup, resulting in a selling price of 163.96 THB per box. Additionally, an online marketing channel was added as a new avenue for distributing the pounded pork products.
