Cultural adaptation of Chinese food consumption among Thai-Chinese people in Yaowarat area

Abstract
This Article aimed to study (1) the history and culture of Chinese food in Yaowarat and (2) the cultural adaptation of the consumption of Chinese Thai people in Yaowarat. The qualitative research used the concept of Chinese food culture that focuses on Teochew and Cantonese cuisine as a conceptual framework. The 30 restaurants in 22 communities of Yaowarat were collected through purposive sampling. The data were collected through in-depth interviews and questionnaires, and analyzed with Content Analysis. The research results were found as follows;
- The history and culture of Chinese food in the Yaowarat area found that 9 types of Chinese food are popular and widespread in society, namely Hainanese Chicken Rice, Porridge, Vegetarian food, Noodles, Dim Sum, Chinese Bun, Chinese Samosa, deep-fried dough stick, and Stir-fried noodles in thick gravy sauce. They are still the original receipt and the making process.
- Consumed cultural adaptation of Chinese Thai people in Yaowarat found that all 9 types of popular foods have been modified, added, or reduced some ingredients to be able to match the Thai food taste and culture. Moreover, some foods can be eaten at any time, and they are not consumed only in a particular festival, such as Chinese Samosa used in ceremonies, festivals, or worshiping Chinese Gods. They have been adapted to become a snack and have a variety of bun fillings.
The knowledge from this research can be applied and developed in education, especially in teaching and learning about the Chinese culture in Thailand, and can bring the knowledge about the process of maintaining, inheriting, and spreading the “Yaowarat”: Chinese food culture in Thailand, continue to create and their identities related to food.
