การออกแบบและประเมินประสิทธิภาพโมดูล Hi-STEM เพื่อพัฒนาทักษะผู้ประกอบการด้านอาหารฮาลาล

บทคัดย่อ
การวิจัยนี้มีที่มาจากช่องว่างทางทักษะของผู้ประกอบการอาหารฮาลาลในพื้นที่จังหวัดชายแดนภาคใต้ที่ยังขาดการบูรณาการด้านเทคโนโลยีและจริยธรรมอย่างเป็นระบบ วัตถุประสงค์การวิจัยเพื่อ 1) ศึกษาความต้องการจำเป็นในการพัฒนาทักษะผู้ประกอบการด้านอาหารฮาลาลในจังหวัดปัตตานี 2) ออกแบบโมดูลการอบรมเข้มข้น Hi-STEM (Halal-Integrated Success Model) และ 3) ตรวจสอบความตรงเชิงเนื้อหาและความเหมาะสมของโมดูลและเครื่องมือวิจัยโดยผู้ทรงคุณวุฒิ รูปแบบการวิจัยเป็นการวิจัยเชิงคุณภาพ (Qualitative Research) ใช้การวิเคราะห์เนื้อหาเป็นหลัก กลุ่มผู้ให้ข้อมูลสำคัญประกอบด้วยผู้เชี่ยวชาญด้านอาหารฮาลาล ด้านการศึกษา STEM และผู้ประกอบการรวม 9 ท่าน เลือกแบบเจาะจง เก็บข้อมูลด้วยการสัมภาษณ์เชิงลึกและการสนทนากลุ่ม เครื่องมือวิจัยได้รับการตรวจสอบความตรงเชิงเนื้อหาและประเมินความเหมาะสมโดยผู้ทรงคุณวุฒิ 5 ท่าน
ผลการวิจัยพบว่า 1) ผู้ประกอบการมีความต้องการจำเป็นเร่งด่วนในทักษะด้าน STEM และเทคโนโลยีอาหาร (The Microscope) ควบคู่กับการปลูกฝังจริยธรรมฮาลาลตามหลักวาซาฏียะฮ์เป็นแกนกลาง 2) ผลการออกแบบได้โมเดล Hi-STEM ที่บูรณาการผลลัพธ์การเรียนรู้ระดับหลักสูตร (PLOs) และรายวิชา (CLOs) ครอบคลุม 4 ด้านหลัก คือ จริยธรรมฮาลาล (The Heart), ทักษะ STEM (The Microscope), ความยืดหยุ่นต่อวิกฤต (The Shield) และการเติบโตทางธุรกิจ (The Rocket) และ 3) ผลการตรวจสอบคุณภาพโดยผู้ทรงคุณวุฒิยืนยันว่าโมดูลและเครื่องมือวิจัยมีความตรงเชิงเนื้อหาและความเหมาะสมในระดับสูงทุกด้าน โดยมีค่าดัชนีความสอดคล้อง (IOC) และผลประเมินความเหมาะสมผ่านเกณฑ์มาตรฐาน แสดงถึงความพร้อมเชิงโครงสร้างและเนื้อหาในการนำไปพัฒนาผู้ประกอบการจริง องค์ความรู้ที่ได้รับคือโมดูลการพัฒนาผู้ประกอบการ "พันธุ์ผสม" ที่ผสานวิทยาศาสตร์และจริยธรรมอิสลามเข้าด้วยกัน ทั้งนี้ งานวิจัยมีข้อจำกัดเนื่องจากเป็นการศึกษาเชิงคุณภาพและการตรวจสอบความตรงเบื้องต้น ผลการวิจัยจึงเป็นข้อเสนอแนะเชิงรูปแบบที่ควรนำไปทดลองใช้เพื่อประเมินประสิทธิผลต่อผู้เรียนในระยะต่อไป
