Applying Lean Technique in Logistics Activities for Hotel Businesses in New Normal Era

Abstract

This research article aims to analyze logistics activities in a hotel case study and exhibit operational guidelines by applying lean techniques in the new normal revolution. To improving this problem, we started by analyzing a case study problem during the COVID-19 pandemic. Then, researchers analyzed logistics activities of the establishment. After that, brainstorming was started with the Lean technique in logistics activities in order to identify the wastes in the process and specify the value from the perspective of the service provider and user. Finally, all guidelines were presented for organizational development in the new normal era. The results of the research revealed that: 1) in customer service and customer order processing, staffs should provide a check sheet tool, including the preparation of manual standard detail, and prepare requirements for the 2019 Coronavirus Disease standard. 2) If we consider the forecasting method, they should prepare customers databases to forecast customer demand in each period. 3) If we focused on inventory management and warehousing, it is recommended to provide room facilities as well as raw materials in each period according to customer database. In addition to this, customers should be able to choose menus in advance in order to make procurement perfectly. However, inventory control must be in a first-in, first-out format. 4) Purchases are based on the customer database in each period and must be related to the amount of inventory. Moreover, the procurement department must have the highest turnover rate. Lastly, 5) in terms of logistics communication, there must be regular coordination with raw material suppliers based on Just-in-Time (JIT) system practice.
