องค์ประกอบของสมรรถนะวิชาชีพอาจารย์ผู้สอน สาขาวิชาคหกรรมศาสตร์ มหาวิทยาลัยราชภัฏ และมหาวิทยาลัยสวนดุสิต

บทคัดย่อ
การวิจัยนี้มีวัตถุประสงค์ เพื่อศึกษาองค์ประกอบของสมรรถนะวิชาชีพอาจารย์ผู้สอน สาขาวิชาคหกรรมศาสตร์ มหาวิทยาลัยราชภัฏ และมหาวิทยาลัยสวนดุสิต โดยใช้วิธีการวิจัยแบบผสม (Mixed Method Research) ทั้งเชิงคุณภาพและเชิงปริมาณ การวิจัยเชิงคุณภาพ มีกลุ่มผู้ให้ข้อมูลหลักจากการสัมภาษณ์เชิงลึก (In-depth Interview) จำนวน 26 คน ซึ่งเป็นผู้บริหารและอาจารย์ผู้สอนที่มีประสบการณ์ด้านคหกรรมศาสตร์ไม่น้อยกว่า 5 ปี ข้อมูลที่ได้นำมาวิเคราะห์เชิงเนื้อหา (Content Analysis) เพื่อสร้างกรอบองค์ประกอบสมรรถนะการวิจัยเชิงปริมาณ มีกลุ่มตัวอย่างเป็นอาจารย์ผู้สอนสาขาวิชาคหกรรมศาสตร์ จำนวน 182 คน จากมหาวิทยาลัยราชภัฏ 13 แห่ง และมหาวิทยาลัยสวนดุสิต โดยใช้วิธีการเลือกแบบเจาะจง (Purpose Sampling) เครื่องมือที่ใช้คือแบบสอบถาม ซึ่งนำข้อมูลมาวิเคราะห์โดยใช้ค่าเฉลี่ย ( ) และส่วนเบี่ยงเบนมาตรฐาน (S.D.)
ผลการวิจัยพบว่า องค์ประกอบของสมรรถนะวิชาชีพอาจารย์ผู้สอน สาขาวิชาคหกรรมศาสตร์ ประกอบด้วย 3 องค์ประกอบหลัก 17 องค์ประกอบรอง และ 118 องค์ประกอบย่อย เมื่อพิจารณาราย องค์ประกอบหลัก พบว่า 1) ด้านความรู้ในวิชาชีพคหกรรมศาสตร์ (Knowledge) องค์ประกอบย่อยที่ได้รับความสำคัญสูงสุด คือ มีความรู้เกี่ยวกับหลักการประกอบอาหาร ( = 4.55) และ มีความรู้เกี่ยวกับหลักการวิชาชีพคหกรรมศาสตร์ (
= 4.52) ซึ่งค่าคะแนนเฉลี่ยอยู่ในระดับมากที่สุด สะท้อนความสำคัญของความรู้พื้นฐานและหลักการทางวิชาชีพ 2) ด้านทักษะวิชาชีพคหกรรมศาสตร์ (Skills) องค์ประกอบย่อยที่ได้รับความสำคัญสูงสุด คือ มีความสามารถประยุกต์ใช้หลักการในการประกอบอาหารประเภทต่าง ๆ (
= 4.57) ซึ่งค่าคะแนนเฉลี่ยอยู่ในระดับมากที่สุดเน้นย้ำถึงทักษะปฏิบัติการที่เป็นแก่นของวิชาชีพ และ 3) ด้านคุณลักษณะที่พึงประสงค์ในวิชาชีพคหกรรมศาสตร์ (Attributes) องค์ประกอบย่อยที่ได้รับความสำคัญสูงสุด คือ มีความประพฤติและบุคลิกภาพที่เหมาะสมกับการเป็นแบบอย่างที่ดีของอาจารย์ผู้สอนคหกรรมศาสตร์ (
= 4.30) และมีความสามารถในการบริหารจัดการงานและภาวะผู้นำในการขับเคลื่อนงานคหกรรมศาสตร์ (
= 4.22) ซึ่งค่าคะแนนเฉลี่ยอยู่ในระดับมากชี้ให้เห็นว่าคุณลักษณะและจริยธรรมเป็นรากฐานสำคัญสูงสุดในการเป็นอาจารย์ ผลการวิจัยนี้จะเป็นแนวทางสำคัญสำหรับหน่วยงานที่เกี่ยวข้องในการกำหนดนโยบายและพัฒนารูปแบบการพัฒนาอาจารย์ผู้สอนสาขาวิชาคหกรรมศาสตร์ให้มีศักยภาพและประสิทธิภาพมากยิ่งขึ้นต่อไป
