Abstract

          The objectives of this study were 1) To Development of a Food Sanitation Operation Manual “Food Establishment” for Ministerial Regulation Hygiene for Food Establishment B.E. 2561 (A.D. 2018) is research and development to develop and improve the original manual (2018). The research applies the Deming Quality Cycle (PDCA) to the development and 2) study of the results of using the Food Sanitation Operation Manual “Food Establishment” The population and sample group are 6 experts in assessing the quality of manuals and 55 users who attended the food sanitation training course for operational staff of the Department of Health. Data analysis included checking content accuracy, mean, percentage, and standard deviation.


          The research results found that (1) a Food Sanitation Operation Manual “Food Establishment” for Ministerial Regulation Hygiene for Food Establishment B.E. 2561 (A.D. 2018) 2) The Manual's Index of Conformity (IOC) ranged between 0.83 - 1.00 and User satisfaction is at an outstanding level (  = 4.56, SD = 0.50) and Considering each point, both the structure and quality of the manual are all at a very good level. The Department of Health should integrate with the Department of Local Administration to communicate and develop electronic systems so that local government agencies use the guidelines of the manual to manage hygiene in food distribution locations. and communicate it to food business operators to have knowledge, understand, and be able to use it to evaluate themselves according to the standard criteria of ministerial regulations.
