Abstract

The Dynamic of Koey Pla and Pung  Pla Canal local food The Case of Nakhon Si Thammarat Province. The purpose is to : 1. to study the context and lifestyle factors of the canal people. Koey Pla and Pung  Pla production source Nakhon Si Thammarat. 2.to study the ways of the Nakhon Si Thammarat Canal people About the wisdom of making Koey Pla-Pung Pla and 3. to analyze the dynamics and persistence of food culture used to Koey Pla-Pung Pla to the way of life in the present. It is a qualitative research. The EFR (Ethnographic Futures Research) research technique was mainly used to collect data in the research area. with participatory observation In-depth interviews with relevant people, Focus Group Discussion and Focus Group analysis, synthesize information from experts.

The results showed that ; The context and lifestyle factors of the canal people. People's lives near canals or water sources with abundant fish. Near the wharf or fresh fish trading point.  The ways of the Nakhon Si Thammarat Canal people it was found that spending time depends on environmental factors, namely water sources with an abundance of fish, spending time on equipment preparation. And go out to find many types of fish, such as laying out hooks, biting traps (fish nets), which usually go out in the evening. In the morning, we will go out to catch fish or cast nets. In the late afternoon, we will go to the fish market, where we will sort out sizes and sell fresh fish by taking our giblets out. Let's make Koey Pla and marinate Pung Pla. The dynamics and persistence of food culture used to Koey Pla-Pung Pla to the way of life in the present It was found that there was an adaptation to social changes. There is learning and development to adjust the production pattern of Koey Pla Pung Pla to be more convenient. Terracotta containers are more convenient than plastic containers. There is a network of people who do Koey Pla Pung Pla with the fresh market vendors. Flea market and curry shop Chinese dessert shop directly. Make the market system used to Koey Pla Pung Pla moves according to market demand. Including markets that order over the phone and order online, deliver directly to the orderer.
