The objectives of this research are three folds. Firstly, to study the evolution of fresh food markets, market fairs, and small traders in the Northeast. Secondly, to study and analyze the links between patterns of trading and economic culture in wider economy, to understand the adaptation of the small traders from past to present. Thirdly, to recommend the measures for flesh food market and small traders’ of flesh food market development. Four provinces are purposively selected, namely Khon Kaen, Ubon Ratchathani, Surin and Nakhon Phanom. In each provincial towns, three markets were selected based on the ages of the markets. The research adopted both qualitative and quantitative research methods to obtained required data. In qualitative methods. There were 834 pretty traders and 480 purchasers interviewed using structured questionnaires, and other 120 individuals who are related to fresh markers and pretty traders were interviewed using semi-structure interview guides. The results of this research are summarized below.
This study found that the fresh market evolved following to urbanization, i.e. the growing density of population initially caused by Chinese, and the town became the transportation center and state administrative center. The evolution of fresh market of the Northeast can be classified in thre e phases, the initial phase between 2424 BE and 2505 BE) is characterized as traditional market. The second period; the ‘booming period” covered during the Vietnam War and 2536 BE, sees the the growing rampant of hyper market. The last phase of evolution is identified as downturn period which happened from 2537 BE onwards. The flesh food markets during this period are decline, and the customers are clearly decreased.
At present, the majority of pretty traders are female, and in previous about one-third to a half of the traders were farmers. At present about one-fifth to one-third of traders continue farming in combine with selling food in the markets. The viability of pretty traders is associated with cheap boot renting, and more varieties of foods available, including natural or local foods, to respond to need of modern life-style of urban dwellers.
