Abstract

This research study shows the many uses of rice field crabs (Esanthelphusa sp.) by the local community of the people around Phanom Dongrak Mountain Range. The research was conducted. to study the consumption of rice-field crab as a food source and for medicinal purposes and 2. To study the development of food and drug products from rice-field crabs. The basic methodology is to interview the local people and collect data and record on the usage of rice-field crabs.


         By conducting in-depth interview techniques from various target groups, we interviewed villagers, doctors and community leaders. In the interview process, we created a questionnaire which was used as a tool to collect data. The study indicated that a there was three uses of rice-field crab as food and medicine. The food is divided into local food that consist of crabs and fermented food made from steamed crabs. The local food is Lawe Kadam which consist of crabs, Fried crab with curry powder and streamed crab paste within carapace’s crabs. Canned food consists of fermented crab, pickled crab, and crab sauce. Utilization of drugs from rice-field crabs can be divided into treatment categories as internal medicine as follows: sexual dysfunction, smallpox, treatment for anorexia, tetanus (blood infection), cure for paralysis, elixir for anti-aging. The external medicine treatments are as follows: Liposuction pill, astringent remedy, cataract medicine, medicinal herbs, burn medicines, treating symptoms for fever, treatment of fresh wounds and rot wounds and chicken pox. The study guideline for development of food products and drug processed products found that seasoning sauce products and elixir for anti-aging.
