Enhancing the Sustainable Efficiency of Fermented Sour Fish Products through Integrated Lean and Marketing Mix Concepts
Main Article Content
Abstract
Currently, fermented sour fish (Pla Som) remains popular in many regions, particularly in Thailand and some Southeast Asian countries. The production process for consumer goods has evolved in tandem with technological advancements and market demands. However, small and medium-sized enterprises (SMEs) producing fermented sour fish face challenges in reducing production costs and expanding their markets to reach new customer segments. Value stream mapping (VSM) was employed to analyze the production process by identifying and eliminating various types of waste throughout the entire process, from start to finish. The ECRS technique—eliminate, combine, rearrange, and simplify—was applied to improve the production process. The marketing mix was utilized to analyze customer needs and preferences. Therefore, the production process was comprehensively reviewed through these techniques, enabling targeted improvements in specific areas of concern. As a result, businesses can enhance their efficiency, strengthen their competitiveness, and achieve sustainable long-term growth. The results revealed that the production process of fermented sour fish was optimized, reducing the number of activities from 14 to 9, a decrease of 35.71 percent. The application of the ECRS technique successfully eliminated non-value-added activities (NVA) and minimized necessary but non-value-added activities (NNVA), reducing overall operational time by 3.54 percent. Additionally, the implementation of the marketing mix strategy—product, price, place, and promotion—can help increase sales competitiveness, expand market reach, and improve the production process for long-term sustainability.
