The Research Analysis about Food Waste Management by Food and Beverage Businesses: the Approaches for Reducing Environmental Impacts

Abstract

          A review of literature indicated that the body of knowledge and the understanding of food waste management in Thailand were still limited. The objectives of this study aimed 1)to explore research works regarding food waste management by food and beverage businesses in Thailand during the past decade and 2) to analyze and synthesize the research works to provide the integrated knowledge for the entrepreneurs for further implementation to reduce the environmental impacts. This study collected data from academic databases from TCI and Google Scholar as well as used content analysis and descriptive statistics to analyze and present the data.

           It found that 1) there were a total of 17 papers studying food waste management by the food and beverage businesses in Thailand during the past decade. Among them, most studies were using the quantitative research, and were conducted in the central areas. Most popular business being examined was general food shops whereas most topics being examined were about food waste management of general food shops. 2) For the synthesis of research works, it was divided into four issues: (1) causes of food waste in business sector (2) problems of business’ food waste management (3)food waste management and (4) approaches for reducing food waste problems. In this regard, the management and business owners may implement the knowledge from this research in their business and operations in order to reduce the impacts to the environment.
